Pear Sauce

This pear sauce is even yummier than apple sauce.

5 lbs pears
1/2 cup water
real vanilla extract - not that crappy fake stuff

Wash pears well, cut them in half and remove core, seeds and bottom flower with a tomato corer. Chop halves into 4 or more pieces depending on how big the pears are.

Put pear pieces into a pot with 1/2 cup water and cook for about 30 minutes with the lid on the pot until pears are nice and soft. Stir often to prevent sticking and burning.

Ladle pears into a food processor, you'll need to do this in 2 or 3 batches. Process each batch for several minutes until pears are super smooth. Add 2 drops vanilla to each batch while it is processing.

After filling jars, use a butter knife or spatula to remove all the air bubbles. Put the jars in a boiling water bath for 5 minutes. Take out and allow to cool. Jars should seal within the hour.

Makes about 4 pint jars.
